Keeping a cake standing in Bodrum heat: choosing the buttercream
Which cream survives 32°C on a beach in August? Swiss meringue, ganache and classic American buttercream compared for heat stability.

In Bodrum, July and August evenings do not drop below 30°C. A wedding cake typically waits two to three hours on the table before it is served. Under those conditions the choice of cream is not an aesthetic decision — it is a technical one.
How each cream handles heat
Classic American buttercream. Butter plus icing sugar. It softens at 26°C and starts to slump at 28°C. Unusable outdoors in a Bodrum summer. Perfectly fine in an air-conditioned room.
Swiss meringue buttercream. Egg whites heated to 60°C, whipped, then enriched with butter. Far more stable: it holds shape for several hours at 30–32°C. Our first choice for outdoor events, and less sweet than the classic version.
Ganache (chocolate and cream). The most robust option. Dark ganache holds to 33–34°C. White chocolate ganache is slightly more delicate but still beats buttercream. As a coating it gives sharp, clean edges.
Fondant. Visually the most heat-resistant, but humidity is the problem. Bodrum’s seaside humidity can leave fondant tacky. Above 70% humidity we avoid it.
Fresh whipped cream. Thirty minutes outdoors. Indoor service only, and serve it fast.

Three precautions that matter regardless of cream
1. Take delivery close to serving. A cake placed on the table two hours early is far riskier than one that arrives 40 minutes before service. Plan the delivery slot with your coordinator.
2. Shade and wind. A table in direct sun runs 6–8°C hotter than one in shade. In wind, fine sugar work and fresh flowers suffer. The ideal spot is shaded, sheltered, and away from heat sources such as a grill or a stage light.
3. Keep heavy decoration low. As cream softens, heavy sugar figures on upper tiers begin to sink. For summer weddings we shift weight to the lower tiers and keep the top light.
If you want fresh flowers
In heat, fresh flowers wilt within two to three hours. You have two options: robust varieties placed close to serving time (orchid, carnation, ruscus foliage), or handmade sugar flowers. The second option is unaffected by heat and indistinguishable in photographs.
One note: several popular wedding flowers — oleander, hydrangea, lily of the valley — are not edible. If a flower will touch the cake, tell us the variety and we will place a barrier.
In short
If you are planning an outdoor event in Bodrum, choose Swiss meringue or ganache, take delivery close to serving time, and have the cake set up in shade. With those three right, we see no problems even at 35°C.
